Sliced Rump Steak with Mango, Tomato and Onion Salad in a Filipino Calamansi Dressing
Ingredients
500g Aussie Rump Steak
Salad:
1 Unripe Mango
2 Beef Tomatoes
1 Red Onion
¼ Bunch Fresh Coriander, chopped
Dressing:
4 tbsp Olive Oil
4 tbsp Calamansi Juice (8-10 calamansi fruits)
1 tbsp Lime Juice
2 tbsp Honey
1 tbsp Fish Sauce
1 Red Chilli, finely diced
1 Thumb Ginger, grated
1 Clove Garlic, crushed
Method
Begin by making your dressing. Add all the ingredients together and mix well to combine. Season to taste.
Thinly slice your mango, tomatoes and red onion.
Combine the dressing with the salad ingredients and leave to marinade for ½ hour to 2 hours. Before serving, stir through your chopped coriander.
Allow your steaks to come to room temperature and season with salt. Heat a pan to a high heat and add a little oil to the pan. When up to temperature fry your rump on either side (approximately a minute and a half per side for medium rare).
Once cooked, season with pepper and allow your steaks to rest.
Once rested, thinly slice your steaks and lay on top of your plated salad.
