Commonly referred to as the NLIS, The National Livestock Identification System is Australia’s system for the identification and tracing of cattle. Every animal is tagged with a unique identification number that it keeps for life. Every cut of beef can be traced back to its source, providing a level of transparency that consumers can trust. This information is held in a central database, allowing the tracing of cattle to occur swiftly and efficiently. It is this that distinguishes the NLIS from other traceability systems.

In 2005, the Australian meat industry worked with the RSPCA to create government-approved best practices. Australian meat processors also follow regulations mandated by state and territory regulations. These requirements are enforced by state inspectors and commercial auditors. For premises that are preparing meat for export, these are governed by the Australian Government’s Department of Agriculture, Water and the Environment.

A Unique Approach to Beef Grading

Over 10 years ago, the Australian beef industry developed and established a beef grading system called Meat Standards Australia (MSA). This quality program labels each piece of beef with a guaranteed grade and recommended cooking methods. MSA is a voluntary grading program that accurately predicts the quality of Australian beef, enabling suppliers to deliver a consistent of quality beef to consumers.

MSA was developed with consumer taste in mind. This means that everyone in the supply chain can work to get a better result at every stage, from the paddock to the plate. There are at least 16 different factors at play, including breed, use of growth hormones, pH, age, and of course beef marbling. Each factor impacts tenderness, juiciness, flavor and the customer's end experience.
