The 2023 Smoke and Fire events at Maldon and Ascot were the largest BBQ festivals in the UK. They lived up to expectations. Even the weather was great for barbecuing.
The festival is a celebration of barbecue food including a host of food pop-ups serving delicious BBQ, rotisserie, and smoked meats. The delicious BBQ meats can be washed down with craft beer and cider. There was live music to keep everyone entertained.
Meat & Livestock Australia - UK were proud to supply the high-quality Australian beef steaks for the “SCA Steak Cook-off Competition”. The Australian grain fed ribeye steaks were a hit with the contestants and judges alike.
High quality and consistency are a hallmark of the Australian red meat industry, and the ribeye steaks did not disappoint. All 12 competitors agreed the steaks were excellent to work with and the judges all commented that the consistency across all the steaks was exceptional. Meat & Livestock Australia - UK’s Stephen Edwards commented, “it was good to see every steak could be eaten and enjoyed. Typically, at these events, you get a lot of variability in the product, which makes it difficult for the chefs and judges alike.”
Stephen Edwards was also one of the lucky judges who sampled the delicious, barbecued ribeye steaks prepared by the 12 competitors. The overall winner for “SCA Steak Cook-Off Competition” was Bullet Brothers BBQ who received a ‘Golden Ticket’ to the 2024 World Food Championships in the USA.
The culmination of the weekend was The British Open Freestyle BBQ Championships. As a freestyle event, there were few restrictions for the contestant chefs. The meat had to be cooked on a BBQ and the dish needed to be carried by one person to the judging tent. There were four rounds: bird, ribs, pork, and beef.
As a freestyle event, there were a wide variety of recipes and cooking styles used by the contestants. The judges commented that the food was “top grade, so much more than just the basics” of barbecue.
